This brand tells the terroir of nature of Hananoka and the culture and history of this region. It's produced with the Kimoto method and fermented in a wooden barrel. No.9 yeast has the root in Kumamoto Pref. It's produced using this yeast. The thick texture of well water matches the rice of local Yamadanishiki. It's an exciting experience like the fresh Umami sparks in the mouth.
