Made using Yamadanishiki rice, which is rich in Umami flavor. It has a dry taste, but the strong Umami creates a beautiful balance.
When it comes to the No. 6 yeast, Aramasa is considered to be the top brand. Akita Jozo, located just 5 minutes away from Aramasa, has frequent technical exchanges with them.
This Junmai Ginjo Sake is made with No. 6 yeast and is very fresh and clear. Despite the "dry" in its name, it offers more than just dryness; it has an exquisite balance of Umami and acidity.
Initially, the sweetness and acidity stand out, followed by a crisp sourness. Dryness spreads in the middle, and the aftertaste is very clear. It is a Sake that you can continue to drink forever.
