Made from 100% Shin Senbon rice from Hiroshima Prefecture, this Junmai Ginjo features the refreshing acidity of shiro-koji (white koji mold) used during the brewing process.
While sake brewed with white koji is typically on the sweeter side, this rare dry-style expression balances acidity with a sharp, clean finish.
Its crisp, lively character makes it an excellent pairing for seafood dishes.
