About Gin-eboshi
Gin-eboshi is a sake rice variety developed specifically to thrive in cooler climates. While Aomori’s Tsugaru region is well known for sake rice varieties such as Hana Fubuki and Hana Omoi, the southern Pacific coast of the prefecture has historically faced challenges in cultivating high-quality sake rice due to the cool Yamase winds.
Gin-eboshi has opened up new possibilities for sake brewing in this region. Its excellent resistance to cool weather, combined with its reliable brewing qualities, has made it an important sake rice representing southern Aomori.
