Aomori prefecture is the most popular production center of the apple in Japan. Hatomasamune Shuzo tried to produce the Sake, which is specialized in Aomori Prefecture.
The apple yeast produces a lot of malic acids and makes the fruity aroma like an apple and grapes.
According to SMV, it looks sweet, but the 3.2 high acidity creates an exquisite balance of taste.
It also has the Umami of rice, so nicely pairing with shellfish and chicken,
