滋賀渡船6号 Shiga-Wataribune-6 was the forgotten rice. Due to its difficult-grow characteristic, farmers stopped growing the rice in 1959.
The rice plant grows higher than Yamadanishiki, and it's a paternal line of Yamadanishiki. In 2004, a small amount of seed was found, and visionary farmers resumed growing the Shiga-Wataribune-6.
The characteristic of the rice is wild but profound Umami. We reconstructed the design of brewing and tried to bring the potential out.
By carefully fermenting under the very low temperature, we could control the wildness and bring the elegant Umami gradually.
