Made from superior brewer's rice "Yamada Nishiki", its rice polishing rate is reduced to 80%. Typically, Yamada Nishiki is used with a rice polishing rate of 40% or 35%. In this case, brewmaster Sato Takumi to showcase the characteristic of not overly polishing the Yamada Nishiki rice.
Thanks to improved brewing techniques, and also credited to the extraordinary skills of Toji Sato, delicious Sake can be brewed without significantly polishing the rice. Even at a polishing rate of 80%, the Sake offers a surprisingly smooth and impressive taste.
