The wooden barrel is the most traditional container. In the past years, wooden barrels were used for fermentation, maturation, and storage. Using wooden barrels for sake brewing is very rare today.
The surface of the wooden barrel is rough and hard to clean, that easy to contaminate at the brewing stage. Japanese sake brewery started to switch from wooden barrels to stainless barrels. And currently, only one company can produce the wooden barrel.
